In most states and territories, retail food businesses involved in the preparation, distribution, supply and sale of food to the general public must have at least one Food Safety Supervisor at the premises.

This requirement exists to reduce the incidents of foodborne illness in the retail food service sectors and improve food handlers’ skills and knowledge.

This skill set provides learners with the skills and knowledge to work hygienically when handling food and to ensure the safety of food during its storage, preparation, display, service and disposal.

This skillset meets the current FSANZ 3.2.2a requirement for SA Food Businesses as the food safety supervisor skill set.

A set of skills to equip individuals in hygienic practices and handling food safely during the storage, preparation, display, service, and disposal of food.

Food Safety Supervisor requirements

    • Personal hygiene

Online - self paced 

Training is completed as self-paced study via our engaging online learning  system which can be accessed 24/7.
Approximate study time 8 hours.                                                                    
Can be completed at your own pace either gradually or in one sitting.                                                                                                        
Workplace evidence and scenarios to demonstrate your understanding is also required to be uploaded as part of your study.

Achievement of this unit provides credit towards a range of qualifications in the SIT Tourism, Travel and Hospitality Training Package.

Licensing/Regulatory Information

Certification requirements apply at a state and territory level to individuals involved in food handling or supervision. Certification in some States relies on the achievement of specific units of competency relating to food safety.

Food safety legislative and knowledge requirements may differ across borders. Those developing training to support specific units of competency must consult the relevant state or territory food safety authority to determine any accreditation arrangements for courses, trainers and assessors.

Language, Literacy, Numeracy and Digital requirements
There are no academic or work experience-based requirements necessary prior to enrolling, however:
  • Students must possess basic skills in written and verbal English
  • Students must be able to navigate online, and use basic technology
  • Students must possess a Unique Student Identifier (USI). You can obtain a new USI or find an existing one from usi.gov.au.
Students will also be required to acknowledge that they are able to:
  • read and interpret food safety programs, policies, procedures and flow charts that identify critical control points
  • complete documentation for monitoring food safety
  • calibrate and use a temperature probe and calculate timings
  • coordinate different food handling tasks to take account of food safety issues

Target Group

This skill set is for food handling personnel or food safety supervisors working in tourism, hospitality and catering organisations with permanent or temporary kitchen premises, and smaller food preparation or bar areas.
